Here is a smoky and spicy (and easy) chicken recipe, made with of course, your Crockpot! This is a great week night meal that you can prepare in the morning and by the time you get off work, you have dinner already taken of! I like to eat the chicken with quinoa and guacamole. Also great with warm corn tortillas topped with sour cream or greek yogurt!
What you'll need: 4 raw boneless, skinless chicken breasts 1 tbsp olive oil 1 onion, diced 2 cloves garlic, minced 1/2 can (one whole can is usually 7.5 ounces) chipotle peppers in adobo sauce. Roughly chop. 1 bottle (12 ounces) of gluten free beer Juice from 1 orange 1/2 cup salsa 1/2 tbsp oregano salt to season
Directions:
Heat oil on medium high heat in pan. Once hot, add onions, season with salt and cook till slightly browned, stirring occasionally. Add garlic and cook for another 2 minutes, stirring constantly. Put onions and garlic in crockpot. Add chicken and the rest of ingredients. Cook on low for 7 hours. Take chicken out and shred with a fork and then add back to pot to soak up juices. Serve and enjoy!
