PB+J Thumbprint Date “Cookies”

My parents are headed into town this week so I decided to buy some jam since my dad likes jam on his toast. If you read my “T-R-I-double guh-ER” post, you know jam is a trigger for me so I am taking a risk with this one. Delicious with a glass of almond milk! Makes 15 cookies.

What you'll need:

12 Medjool dates pitted

1/4 cup peanut butter

1/2 cup raw almonds

1/2 tbsp maple syrup

1/2 tsp vanilla

raspberry or strawberry jam

Directions:

In a blender, add almonds and pulse till finely ground. Add dates and peanut butter and blend. Add maple syrup and vanilla and pulse till combined.

Empty batter into a bowl and with your hands roll batter into 15 balls. Then press down the center with your finger and add a tiny bit of jam. Put in fridge for a couple hours before serving. Store in an airtight container in fridge.
