These vegetarian bunless burgers made with black lentils and quinoa are packed with protein and good-for-you fats. Makes 4 patties, serves two people.
What you'll need: 1 cup cooked black lentils 1/2 cup cooked red quinoa 1/4 cup almond flour 1 egg 1 tsp cumin 1 tsp coriander 1/2 tsp smoked paprika sea salt to season 1 tbsp olive oil Aioli: 1/2 large hass avocado 1 tbsp olive oil 1/4 of a lime 1/4 of a lemon 1 tsp spicy brown mustard 1 garlic clove 1/8 cup non fat greek yogurt sea salt and pepper to taste
Directions:
In a bowl mash up lentils with a fork. Add quinoa and the egg (whisk egg in a separate bowl first). Add spices and a few shakes of salt. In a frying pan heat oil. Once hot, add patties. Cook on medium heat for 3-4 minutes on each side until browned.
To make aioli, throw everything in a blender and blend still well combined. Taste and add more of anything based on preference.
I like my lentil burger topped with aioli and wrapped up in some lettuce. Enjoy!
