PC Granola

I can’t have a website called granola.love and not have a granola recipe! So here is my yummy and hearty PC (pecan/cashew) Granola. Super easy to make and easily devoured!

What you'll need:

1 cup unsalted pecans 
(I like to do a quick chop on my pecans before adding)

1 cup lightly salted cashews

1/2 cup unsweetened coconut flakes (untoasted)

2.5 cups rolled oats

1/4 cup coconut oil (melt in microwave)

1/4 cup date sugar (brown sugar will also work)

1/4 cup maple syrup

Directions:

Preheat oven to 250 degrees.

Mix up dry ingredients. Mix up wet ingredients. Pour wet over dry and combine.

Lay parchment paper on baking sheet (or lightly spray baking sheet with nonstick spray) and add your granola. You may need two baking sheets. Spread out evenly and thinly. Cook for 60-70 minutes. Every twenty minutes, use a spatula to move the granola around so it gets browned on all sides.

Eat by the handful or add it to your favorite greek yogurt (mine is Ellenos Marionberry). Store in an air tight container once cooled. Enjoy!
