I LOVE Mexican food! I also love Taquitos but never order them because they are fried and full of fat. Here is my healthier homemade baked version. Makes 12 taquitos.
What you'll need: toothpicks 12 corn tortillas Filling: 2 boneless, skinless chicken breasts,cooked and shredded (store bought is fine too) 1/2 cup green salsa 1 jalapeno, seeded and diced finely 1/2 cup plus 2 tbs non fat greek yogurt 2 tsp cumin 1 tsp paprika pinch of salt 1/2 lime shredded cheddar cheese
Directions:
Preheat oven to 400 degrees. Prepare a baking dish lined with aluminum foil and sprayed lightly with non stick spray.
In a large bowl combine all ingredients except cheese.
Heat corn tortillas in microwave. Place 2-3 tortillas at a time on a plate and cover with a wet paper towel. Heat for 30 seconds. This will make the tortillas easier to roll.
Add a couple tbs of chicken mixture to end of each tortilla, sprinkle with cheese, roll up and secure with two toothpicks. Make sure you do not put too much mixture in the tortilla or it will be hard to roll and they will come undone while baking.
Place taquitos in baking dish and bake for 20-25 minutes. Serve with guacamole and salsa. Delicioso!
*When I make these I will cook my chicken in the crock pot the day before or morning of. Place raw chicken breasts in crock pot and pour in 1/2 cup salsa, 1/4 cup water and season with salt and pepper. Cook on high for 4 hours and then shred.
