Kale Caesar Salad

My husband loves Kale Caesar Salad. He always buys it pre-made at our local grocery store. So I have created a recipe that he says tastes exactly the same. Score! Makes 4 servings.

What you'll need:

2 bunches lacinato kale

shredded parmesan cheese (shredded, not grated)

Dressing:

1/8 cup non fat greek yogurt

1/8 cup hummus (original flavor)

1/2 tbsp spicy brown mustard

1/2 tbsp caper juice (from jar)

1/2 tbsp capers, minced

1/2 tbsp lemon juice

1 clove garlic, minced

1 1/2 tbsp olive oil or avocado oil

1/2 tbsp water

salt and pepper to season

If you are new to kale, you should know that you will not want to eat the “rib” (the hard part down the center). I just use my hands to pull the kale off the rib, discard the rib, chop up the kale into smaller pieces and then wash.

For dressing, place all ingredients in a bowl and whisk till combined. Place kale and cheese (however much cheese you want) in a large bowl and toss with dressing. Shake and eat up! Serve with chicken or steak for a delicious lunch or dinner!
