Apricot Almond Bites

If you are tired of raw desserts made with dates, dried apricots are a great alternative. Here is my 5 ingredient Apricot Almond Bites. To me, these taste like Marzipan and I LOVE Marzipan. Makes 15 balls.

What you'll need:

1 cup tightly packed dried apricots
(I used turkish apricots. I prefer them over regular)

1 cup raw almonds

1/3 cup shredded unsweetened toasted coconut

1/2 tsp almond extract

1/2 tbsp maple syrup

Directions:

In a blender, pulse almonds until finely ground. Then add coconut and pulse several times. Add in handfuls of apricots at a time and blend. Then add almond extract and maple syrup and pulse until it comes together and forms a “dough”. Put dough in a bowl. Roll dough into balls and set on a plate. Refrigerate for two hours before serving. Keep the balls stored in an airtight container in the fridge. Enjoy!
