Vegetarian Madras Curry

I love Indian food and curry is one of my favorites. This one is super easy since you will be using a store bought curry.

What you'll need:

1 lb carrots (about 6 large carrots)- peeled and chopped

1/2 tbsp avocado oil (or olive oil)

1/2 cup frozen peas

1 can garbanzo beans- drained and rinsed

1 cup chopped mushrooms

1 jar store bought madras curry (I use the Maia Kaimal brand,
they have different varieties of curries too)

Directions:

Preheat oven to 425 degrees. Put carrots in a bowl with 1/2 tbs oil and season with salt. Add carrots to a baking sheet lined with aluminum foil. Bake for 25-30 minutes or until tender.

Place mushrooms in a pan on medium heat. Cook for about 8-10 minutes until they shrink and become brown. I do not saute them in any oil, just as is.

Add carrots to mushrooms along with peas, beans and curry sauce. Simmer for 10-15 minutes. Eat with quinoa and top with greek yogurt for a complete dinner!
