Nutty Date Balls

Date balls are sort of a popular thing right now. They are gluten free, most are vegan, they only have natural sweeteners in them, AND they are super easy to make plus no bake time! It’s like eating healthier chocolate chip cookie dough 🙂 Makes 12 nutty balls.

What you'll need:

Blender

12 Medjool dates pitted 

1 cup pecans (you can use whatever nuts you have laying around.
I prefer unsalted. If you only have salted nuts on hand, then omit
the pinch of salt)

1/2 tbsp maple syrup

tiny tiny tiny pinch of salt

1/2 cup unsweetened shredded coconut

1/4 tsp cinnamon

1/4 cup vegan chocolate chips or chunks 

Directions:

Put pecans in a blender and pulse until finely ground. Then add all other ingredients (except chocolate chips) and blend until combined. Empty batter into a bowl. Fold in vegan chocolate chips. Vegan is what I had in the cupboard, feel free to use regular. With your hands, roll batter into 12 balls.

In a separate small bowl combine coconut and cinnamon. I had the larger shredded coconut on hand so I pulsed my coconut in the blender to make it finer. Roll balls into coconut and cinnamon mixture and place on a plate lined with parchment paper. Place in fridge for a few hours before serving. Store in airtight container in fridge up to one week.
