Coconut Raspberry Tart

This is my great grandmother’s recipe and it is one of my all time favorite desserts. I make it gluten-free but you don’t have to.

What you'll need:

gf pie crust (pre-made, find in frozen section)

raspberry jam

4oz butter

1/2 cup sugar

2 beaten eggs

1 cup gf all purpose flour

1 tsp baking powder

1/2 cup shredded coconut- I prefer Baker's brand for this one.

1/2 cup almond milk or regular milk

Directions:

Preheat oven to 375 degrees

Take pie crust and with a fork, poke holes into the bottom. Add a thin(ish) layer of jam to bottom of crust. I LOVE jam, so I like my layer a little bit thicker.

Cream together butter and sugar. Add all other ingredients and mix well. Add batter to pie crust.

Bake for 25-35 minutes or until a toothpick comes out clean.
