Coconut Raisin Cookies

These delicate cookies are a perfect companion to some afternoon coffee or tea. Makes about 20 cookies.

What you'll need:

1/4 cup coconut oil, melted

1/4 cup honey

1 egg

2 tbsp maple syrup

1 tsp vanilla

2 cups almond flour

1 cup unsweetened coconut flakes

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/2 cup raisins (I used golden raisins)

Directions:

Preheat oven to 350.

In a mixer, mix together wet ingredients. Add dry ingredients (except raisins) and mix till well incorporated. Fold in raisins with a spatula.

Drop spoonfuls onto a baking sheet lined with parchment paper. Bake for about 10 minutes. Wait a couple minutes to let them firm up before transferring to a wire rack to cool.
