Cauliflower Mashed “Potatoes”

This is by far, the best alternative to mashed potatoes, in my opinion. It is healthier, fewer carbs and tons of vitamin C! I make this at least once per week. You can also find it used in my Shrimp n’ “Grits” recipe. If you want a smoother consistency (more like a puree), add just a touch more of milk and blend until completely smooth. Serves 2-3 people.

What you'll need:

one head of cauliflower

1/4 cup grated parmesan cheese

salt

pepper

1/8 cup almond milk (or regular milk)

Directions:

Wash cauliflower and cut into florets.

Boil in water for 15 minutes, until tender. Drain.

Add to blender. Add parmesan cheese and milk. Blend until smooth. Add salt and pepper to taste. Tastes great on its own, or make it a whole meal with a protein of your choice. Delicious!
