Acorn Squash Breakfast Bowls

I love Acorn Squash! Full of nutrients including vitamin A and C. You can also bake the squash the night before and reheat the following morning to save time. Serves 2 people.

What you'll need:

1 acorn squash

1 tsp coconut oil- melted

1 tsp date sugar (or brown sugar)

1/2 tsp cinnamon

nonfat greek yogurt

honey

granola (check out my PC Granola recipe)

Directions:

Preheat oven to 425 degrees.

Wash acorn squash and then cut in half lengthwise. Scoop out seeds. In a small bowl mix together oil, sugar and cinnamon. Divide in half and add to bottom of each squash and rub around with your fingers.  Bake on a baking sheet for 40 minutes.

With a fork scrape the squash to lift up all the goodness and then add a scoop of yogurt, drizzle some honey and a couple tbs of granola. Very satisfying! Enjoy!
